Last night for dinner I made Rick Bayless's Enchiladas Suizas. This was my first time making a red enchilada sauce from scratch. They were delicious.

Over the weekend TK made maple nut ice cream. We both think this is one of our new favorites. It is from Jeni's Splendid Ice Creams at Home cookbook. I gave TK this cookbook for Christmas and we are excited to explore more recipes from it.

This weekend I finished all of my December Daily pages. I'm very happy with the result and the memories captured. I still need to complete the cover - Thomas has "electrical" plans for it.

For days 28-30 I did non-date specific pages about the holidays.

For dinner the other night I made Gnocchi Carbonara. It was delicious (what wouldn't be with cream, bacon, and cheese). We used store bought gnocchi this time around.

I've got my 3 day weekend task list prepped - now off to accomplish & enjoy!
