Greeting Friends :: I know you have been waiting for a while for the recipe to the beautiful lemon drop jello shots I made over the 4th o' July. Well here it is. They were a bit complicated but much more delicious then just using lemon jello.
Lemon Drop Jelly Shots (Adapted from Jelly Shot Test Kitchen and Machessmo)
Makes about 25 squares in an 8×8 pan.

Lemon Syrup:- 4 large lemons, cut into eighths
- 2 Cups water
- 1 1/2 Cups sugar
- 2 Cups water
- 1 1/2 Cups sugar
Shots:
- 2 Cups lemon Syrup (you may have some left over)
- 1/2 Cup water
- 4 envelopes gelatin (1 ounce)
- 1/2 Cup Triple Sec or Cointreau
- 1 1/2 Cups vodka
- Large raw sugar for garnish

The use of the lemon peels added a wonderful touch of class. I used the peels from the lemons used in the simple syrup. A muffin tin added support and kept them from tipping over.
